These were a huge hit at my office "Cookie Party". And they're fun to make! Ok, a bit messy, but still....My own recipe, btw. :-)
Chocolate Covered Peanut Butter Balls
1 ½ bags milk chocolate morsels (11 oz)
1 ½ cups butterscotch morsels
1 cup butter
1 lb powdered sugar
1 cup brown sugar (either light or dark)
1 jar peanut butter (16 oz)
Mix together powdered sugar, brown sugar, butter, and peanut butter until well blended. Roll into small balls. Refrigerate for at least 20 minutes. Mix morsels together in a microwave safe container. Microwave for 1 minute – stir mixture until well blended. Microwave for another 1 minute to completely melt mixture. Dip peanut butter balls into mixture until coated. Let excess chocolate drizzle off before placing on waxed paper-covered cookie sheet. Refrigerate until chocolate sets. Serve.
Yields apx. 2 ½ to 3 dozen covered peanut butter balls.
***If you have any extra peanut butter mixture left over, roll in powdered or brown sugar and serve without the coating.
